Convivio
Table
Pappardelle in the ragù.
Parmesan while it’s hot.
This table begins with beef, wine, San Marzano tomato, soffritto and wide ribbons of pasta. Everything else is chosen to sit comfortably beside it.
Two mains · three accompaniments · focaccia on every table · one sweet endingWhat gets passed.
The ragù is the signature. Choose a second main to give the table another voice. Focaccia is already in the middle.

Chef’s Accompaniment
A seasonal preparation selected for the table.
Built for
the room.
Some Italian food loves time. Some demands the last few minutes.
Ragù settles deeper into itself. Eggplant Parmigiana holds beautifully. Porchetta slices cleanly and stays generous. Polenta is happiest warm and soft.
Piccata gets its lemon close to service. Focaccia stays uncovered long enough to keep its crust. Cannoli are filled late so the shell still cracks when you bite it.
We adjust the technique, not the character of the food.
Three finishes.
Tiramisu
Espresso · mascarpone · cocoa
Cannoli
Sweet ricotta · chocolate · pistachio
Lemon Ricotta Cake
Lemon glaze · candied lemon
