Some Italian food loves time. Some demands the last few minutes.

Ragù settles deeper into itself. Eggplant Parmigiana holds beautifully. Porchetta slices cleanly and stays generous. Polenta is happiest warm and soft.

Piccata gets its lemon close to service. Focaccia stays uncovered long enough to keep its crust. Cannoli are filled late so the shell still cracks when you bite it.

We adjust the technique, not the character of the food.
